Also called “Winter Scorzone”, being very similar both in appearance and flavor to the Summer Truffle. Its slightly marked scent recalls the scent of the land where it is harvested: mainly clayey and humus-rich soils in fresh and humid mountainous areas. It has a warty black peridium and a chocolate-colored pulp with white veins.
The minimum purchase order is 100g, sizes from 10g to 25g.
Harvest period: from 1st October to 31st December.
Use: excellent raw or slightly heated on any dish, both grated and thinly sliced. It can therefore be used according to the preparation of the dishes at the beginning, during or at the end of cooking.
